in order to sensibly answer your questions I would probably have to write a few dozen pages.

I think it makes more sense if you look up those topics either in a good book or in the web resource I found (University of Pittsburgh) at http://granul ar.che.pitt.edu/~mccarthy/che1011/outline.html. They cover both heat and mass transfer on this web page.
