Hi! Transition metals are very chemically active. Rancidity is caused by 
free radical mechanisms, and the metals, because they can also be easily 
oxidized and reduced, can accelerate the reaction.  What you are looking 
for are compounds that can scavenge free radicals and quench the reaction. 
Generally, anti-oxidants perform that function.  The specific use of sugar 
is not something that is commonly recommended. Cheers.
