Dear Katherine:

I am not sure about your question. But from what you understand, the name 
of that "hole" is "hylum" and it is very evident in black beans for 
example. If you are interested in seed germination, you could look in books 
about Plant Physiology (sorry I do not remember any author now). Or you 
could try the book Plant Biology by P. Raven (The director of the Missouri 
Botanical Raven).
