An interesting question.  I am a food microbiologist, but I conferred with 
some of the Cereal Scientists here at NDSU and the general consensus is 
that for a 1-bushel volume of hard red spring wheat (about 60 lbs) you 
would get 42 lbs of white flour, 15 lbs of bran and 3 lbs of clear flour.  
From the 42 lbs of white flour, you could get 66 one lb loaves of white 
bread.   This can vary quite a bit depending on the type of wheat, the 
quality of the wheat, the type of flour, and the type of bread.  This 
information comes mostly from the North Dakota State Wheat Commission (1305 
E. Central Avenue, Bismark, ND  58505).
