The main ingredients in plant phloem sap would be sugars, amino acids and 
potassium. That would not be flammable unless it was dried. For most species, 
xylem sap would be even less flammable because it contains water and mineral 
nutrients, except in rare cases. In winter, sugar maple xylem is the source of 
the sugary maple sap used to make maple syrup.

If you can't find anything on the internet about banana phloem sap, you would 
probably have to search scientific literature databases, such as Science 
Citation Index. See the last references for some places to search.
