I am unaware of protists other than algae that might be used in food. Some protozoa occur in food, but these often cause human illness. On the other hand, if you use the term "seaweed" to mean only algae that grow in marine environments, this is incomplete. Many algae also grow in fresh water, and many algae are used as food or as food constituents such as gelling or thickening agents. An extensive reference on this subject follows.
