I always assumed that the enzyme zymase in Saccharomyces cerevisiae is a single enzyme. After hours of online research, your website informed me that, "The term 'zymase' actually refers to a complex of several different enzymes that catalyze glycolysis." I am specifically interested to know the names of all the enzymes that constitute the zymase in Saccharomyces cerevisiae. In addition, I would like to know the names of the yeast enzymes involved in converting pyruvate to acetaldehyde, and acetaldehyde to ethanol and carbon dioxide.
