Like all living creatures, fish have cells with cell membranes. These membranes regulate the flow of salt ions into and out of the cell. Other processes control the movement of salt into and out of the blood supply. Those fish that move between salt water and fresh water do have to make a physiological transition so that they are able to adjust for this change. Thus, the "saltiness" of all meats whether terrestial or marine tend to be fairly close and do not reflect the environment.
