I must begin my reply with a warning in capital letters:

WHAT YOU ARE DOING IS DANGEROUS AND CAN SERIOUSLY HURT YOU!!!  I DO NOT 
RECOMMEND CONTINUING THIS EXPERIMENT BECAUSE OF SERIOUS HEALTH AND SAFETY 
CONCERNS!!!

The grade of dry ice that you are using can have impurities in it that can 
and will make you very sick when dissolved in a beverage!!  It is also 
very difficult to meter out the correct amount of dry ice into the bottle 
without causing explosions that can and will cause high speed projectiles 
to fly through the air!! Please take my advice and learn more about the 
process of making soda using a gas cartridge carbonation system.  This 
type of system can be purchased in any gourmet store.  

Now just for intellectual curiousity, here are the answers to your 
question:

1.  A typical 2 liter PET bottle is designed to blow out at the cap 
threads with 150 psi.

2.  A typical 2 liter carbonated soft drink (csd) contains approximately 
35 psi at 45 degrees F.
