I'm sure there's a fair amount of variability in the heart rates of various 
types of fish, but some of the fish we are familiar with have heart rates 
similar to humans.  Humans have heart rates of about 60 to 100, even up 
to 150 with vigorous exercise..... according to  this website, fish 
have heart rates of about 70 beats/minute.

According to a research report, in Adobe Acrobat (.pdf) format that you can 
download  
here,  the heart rates of tuna can vary from 40 to 140 beats/ minute 
depending on the changes in water temperature that the tuna encounters.
