Dear Kassandra:
Thank you for your question. In deciding what to use as a subtopic, think about your main project: How does music affect heart rate?

One subtopic of that could be what controls heart rate under normal circumstances? Another could be what happens to heart rate under other conditions, such as stress? Yet another could be: what research has been done on the effect of music on the body, whether or not it is directly related to heart rate, and do these other effects also have an impact on heart rate (eg are chemicals released in the brain upon hearing music and do these chemicals have heart-rate effects?). And a final one could be: does whether a person likes a piece of music or not impact the heart rate (or do particular types of music - eg jazz vs heavy metal have different effects)?

So, in essence, thinking of subtopics requires thinking about your project in a broader sense and then choosing pieces of it to study.

I hope this helps!
