I understand that heat does destroy vitamin C, but I don't understand why. Can
it be explained by the Maxwell-Boltzmann distribution? I have searched the
archives and all that turns up is information about factors that result in the
degradation of Vitamin C, not why heat destroys the vitamin. Thank You
