Hi Matt:

I had a look around, and couldn't find anyone using a technical term for "Shark researcher". However, sharks belong to the taxon "Chondrichthyes", so a shark researcher could be called a "chondrichthyologist" (try saying that ten times quickly!). Otherwise, the general term for a person who studies forms of life that live in the ocean is a marine biologist.
