You are absolutely right. Vinegar is used to denature proteins in foods in everyday cooking also, like in marinades or in making dishes like ceviche. But you can also denature proteins by mechanical methods, like making whipped cream or merangues, or traditional cooking. So the egg looked cooked because it was, just not by applying heat.
